UUID v4 vs UUID v7

Version 4 UUIDs are random and remain the default in most apps, libraries, and docs. Version 7 UUIDs embed a Unix timestamp, so newer IDs tend to sort after older ones — useful when inserting rows or scanning recent events. Both stay 128-bit UUIDs and work as strings in APIs and databases.
